Land that was once a high country sheep station is now a flourishing vineyard. Sheep and rabbits co-existed on the land for quite some time but the sheep couldn't keep up with the nocturnal activity of the rabbits, and in the end were driven off the land. Rabbits now run free on the vineyard and fuelled by high altitude Pinot Noir, some are reputed to be the size of ponies, but that's another story... The Rabbit Ranch Pinot Noir is made in a very soft, fruit forward, low tannin style - a wine to be savoured and supped, rather than an assault on the senses.

On the palate, there fruity sensations of red fruits, plums and peaches, coupled with a characteristic acidity.

Intense fruit flavours reminiscent of red berries, violets and liquorice. There is good structure on the palate, its well-rounded with fruity sensations and a long aftertaste.

The nose opens with lifted aromas of wild cherry, redcurrant and dried thyme, underpinned by hints of rose petal and subtle oak spice. On the palate, fine-grained tannins frame a core of vibrant red fruit, complemented by savoury undertones and a touch of earthiness from the whole bunch inclusion. A cold soak and extended post-ferment maceration have contributed depth of colour and a silky, layered texture, while 12 months in French oak lends structure and finesse. Bottled unfiltered, this wine is pure, expressive and built to evolve gracefully over time.

Ageing select lots in rum barrels enhances the notes of baking spice, brown sugar, vanilla, and cocoa when added to the final blend. Dark chocolate notes carry through to a long, lush finish. A superb accompaniment to spiced meats and poultry, Brie with fig jam, and chocolate desserts.
